Who doesn't love some fresh apples? The crisp. The juice. The crunch. Wow, who doesn't get enticed by just the thought of an apple?! Apples are a great fruit this time of year. However, raw apples can be a little unsettling this time of year.

With the cold and dry outside, raw food can create a little extra gasiness in the system. But, cooked apples are a great way to incorporate this delicious fruit into your winter diet. Try this apple crisp recipe as a great dessert, or even as a warm and filling breakfast item.

Ingredients:
  • 5-6 apples (I prefer honey crisp), peeled and chopped
  • 3-4 tablespoons of ghee
  • 3 cinnamon sticks
  • 4 whole cloves
  • Pinch of fresh ginger
  • 2 cups rolled oats
  • 1/4 cup wheat flour
  • 2 tsp cinnamon powder
  • 1/4 tsp nutmeg
  • 3 tsp cardamom
  • 1/4 cup sucanat (or a natural sweetener of your choice)
  • 1 stick of butter
  • Sliced almonds

Directions:
  1. Warm the ghee in a nice large pot
  2. Once the ghee has completely melted, pop in the cinnamon sticks, cloves, and ginger, and let them get nice and warm
  3. Drop in the apples and coat the apples thoroughly with the ghee
  4. Take 2 teaspoons of the sucanat and pour and cover the apples
  5. Cover the pot with a lid, and let the apples cook in the steam
  6. You will cook the apples for approximately 10-15 minutes, until the apples have began to soften
  7. While the apples are cooking, make the topping by mixing the oats, flour, cinnamon, nutmeg, cardamom, and remaining sucanat in a bowl
  8. When the apples have softened in the ghee, pour them into a baking dish
  9. Cover all of the apples with the oats topping
  10. Cut the stick of butter into little slabs and pop on top of the oat mixture to help the coats cook in the oven
  11. Bake the crisp for approximately 40 minutes on 375 degrees, mixing the oats and apples all together 1/2 way through
