I love arugula! This slightly bitter leafy green is packed with vitamins, minerals, and phytonutrients. It's a great veggie for the liver, which will indirectly help cleanse your blood. It also works great to give you a mild detox in your lymph system. From an Ayurvedic perspective, the bitter taste works as a cleanser in the body to help push debris out of the system. Summer is such a great time to get boatloads of arugula, and that is exactly what I did. I ended up with 3 bags of arugula--more than I really knew what to do with. So, I decided to make a yummy arugula pesto that can sit in the fridge for up to a week (longer if you freeze it).

Enjoy this healthy pesto on your pasta, as a base sauce for pizza, in your summer salads, and so much more!

Ingredients:
  • 2 bags arugula
  • 5 cloves garlic
  • 3/4 cup olive oil
  • 1 tsp salt
  • 1/2 tsp basil
  • 1/2 tsp black pepper

Directions:
  1. Be sure the arugula is washed and cleaned
  2. Put all ingredients into a blender and blend until it is nice and smooth
  3. If you would like the consistency to be thinner, try adding a little water into the mix

This is a quick and easy pesto to make if you have arugula lying around that you don't want to toss away because the leaves are getting yellow. It's also a great way to get those nutrients in and sneak in healthy veggies into your family meals.

Enjoy!
