Banana Chia Pudding

What to eat for breakfast? This is the perpetual question that haunts us every morning. The preparation, the thinking, the time...it's all so brain-fogging it hurts. And of course, the "quick and easy" things never seem to be that quick, easy, OR healthy for us. So, what to do? 

Well, let's talk chia. I love this stuff, really I do. It's packed with all sorts of great proteins and hydrating qualities. The way it plumps up is amazing as well. This breakfast pudding will be all the rage in your house--I promise. It's like eating dessert for breakfast. How can you go wrong with that? 

On top of all that, it really is quick and easy. I promise. This is such a great way to get some of your daily fruit intake in, as well as the hydrating properties of both coconut and chia seeds. You can't go wrong, trust me!

Ingredients:
  • 1/4 cup chia seeds
  • 1 cup coconut milk 
  • 2 ripe bananas, mashed
  • 1/3 cup date sugar or sucanat 
  • 1/2 tsp cardamom
  • 1 tsp vanilla extract 

Directions:
  1. All you have to do is mix all of the ingredients together in a mixing bowl. ​
  2. Let the pudding sit for minimum of 3 hours until the mixture has started to congeal. 
  3. Enjoy with some fresh cracked cardamom on top or sliced bananas or berries!
*Optional, you can also blend all your ingredients together before you let it sit for a smoother consistency.
